With wonderful aromas of baked apple, the age of the vines has has added complexity, richness and depth of flavour. The palate remains nervy and fresh to the finish. This is a textured and full flavoured expression of Chablis.
About the wine:
The Domaine de la Motte Chablis Vieilles Vignes is made from low yielding vines growing on north facing kimmeridgan and chalky soils surrounding the village of Beines. From here parcels of vines approaching 50 years old are selected for the Vieilles Vignes Chablis.
After harvesting, the grapes undergo slight maceration and gentle pneumatic pressing before racking and fermentation in Stainless Steel for 15 days at around 21°C. Around 15% of the must is fermented in large (600 litre) oak barrels for 15 days remaining in oak for 8-12 months. Malolcatic fermentation lasts up to 5 weeks.
About the Producer:
Domaine de la Motte is owned and run by self taught winemaker Bernard Michaut. Established in 1950, the Domaine has around 25 hectares of vines around the village of Beines, near Chablis.
Food Match:
The Chablis Vieilles Vignes will be a wonderful match with lighter fish and chicken dishes. Anything with more subtle, creamy flavours would be a delicious partner to the creamy, minerally notes of this Chablis.
