Round, elegant and seducing, with white flowers on the nose and palate, this wine has also a great fineness.
About the wine:
Located between Valmur and Preuses, next to Grenouilles, the grand cru Vaudésir spreads over almost 15 hectares . Vaudesir is characterized by a more sloping land, a less calcareous and a bit lighter soil than the other grands crus.
The vines are grown to the optimum maturity before mechanical harvesting. After harvest the grapes are immediately taken to the cellar for pressing. During pressing, the collected juices are seperated from the harvest to avoid oxidation. The pressed skins are then re-pressed softly to extract more juices whilst avoiding breakup of the skins, ensuring the best freshness and finesse of the wines.
The alcoholic fermentation and ageing of the wine is done in oak barrels. The natural coolness of the cellars puts the wine through a natural cold stabilzation.
The wines are lightly fined and filtered after 12 months ageing in french oak, before bottling.
About the producer:
The Domaine Defaix is a true family affair.
Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares. At about this time, the first techniques for protecting vineyards from spring frosts were discovered.
Over the years, Bernard and his wife Monique have acquired new land. Their efforts duly enhanced the domain, which now included some of the best named vineyards of the Chablis region.
Today, true to the family tradition, the domain is run by Sylvain and Didier. Bernard nevertheless continues to provide his expert advice to his two sons. Didier looks after the vineyards, sales and marketing, and the accounting. Sylvain is in charge of all the wine making, ageing, bottling and orders. Helene, Didier’s wife, has worked at the winery since 2002 in a sales and administrative role.
