The remarkable stony and sunny soils of the vineyards are captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The wine is full and flavoursome but with a firm backbone of acidity. The Côte de Lechet is one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.
About the wine:
For many years the Domaine had been moving towards a sustainable and more ecologically friendly way of farming. Since 2009 Bernard Defaix has been officially certified as Organic. The soils are from the Upper Jurassic period (Kimmeridgean only for all of their plots). The plots are located on hillsides facing South-East with yields kept to 48hl/ha.
The grapes are carefully hand harvested and sorted before being gently pressed. The alcoholic fermentation, followed by the malolactic fermentation, take place in stainless steel tanks.
The wine is kept on its fine lees for 8 to 12 months with regular lees movement to enrich the wine. Around 20% of the wine is oak aged for 12 months before the final blend is created.
About the producer:
The Domaine Defaix is a true family affair.
Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares. At about this time, the first techniques for protecting vineyards from spring frosts were discovered.
Over the years, Bernard and his wife Monique have acquired new land. Their efforts duly enhanced the domain, which now included some of the best named vineyards of the Chablis region.
Today, true to the family tradition, the domain is run by Sylvain and Didier. Bernard nevertheless continues to provide his expert advice to his two sons. Didier looks after the vineyards, sales and marketing, and the accounting. Sylvain is in charge of all the wine making, ageing, bottling and orders. Helene, Didier’s wife, has worked at the winery since 2002 in a sales and administrative role.
